Ingredients
- 150g or approximately 8 Medjool dates, pitted
- 120g (1cup) pecans or pistachios
- 30ml (2 tbsp) classic maple syrup or ME, MAPLE & I’s specialty maple syrup (vanilla or coffee)
- 100g dark chocolate, melted
- 100g small rolled oats
- ½ cup coconut (optional)
Method
- In a food processor, grind all the ingredients to a paste.
- Place the mixture in the fridge for 15 minutes to allow it to set a little.
- Using slightly wet hands, shape into 12 to 16 small balls.
- Roll the energy balls in the coconut.
