maple and chocolate energy balls

Ingredients

  • 75g or 4 Medjool dates, pitted
  • 60g (½ cup) pecans or pistachios
  • 30ml (2 tbsp) classic maple syrup or ME, MAPLE & I’s specialty maple syrup (vanilla or coffee)
  • 50g dark chocolate, melted
  • 50g small rolled oats
  • ¼ cup coconut 

Method

  1. In a food processor, grind all the ingredients to a paste.
  2. Place the mixture in the fridge for 15 minutes to allow it to set a little.
  3. Using slightly wet hands, shape into 6 to 8 small balls.
  4. Roll the energy balls in the coconut.
