- 20 dried apricots (about 200g)
- 1/2 cup mascarpone
- 1/4 cup pistachio, roughly chopped
- 1/2 orange, its zest
- 1 tsp ginger
- 1 tbsp maple syrup
- In a bowl, mix all the ingredients.
- Cut the apricot in 2 without separating them completely.
- Fill the apricot with the mascarpone mix.
- Repeat the steps until there is no more mascarpone mix.
