apricot mascarpone and pistachio bite

Ingredients

  • 20 dried apricots (about 200g)
  • 1/2 cup mascarpone 
  • 1/4 cup pistachio, roughly chopped
  • 1/2 orange, its zest
  • 1 tsp ginger
  • 1 tbsp maple syrup

Method

  1. In a bowl, mix all the ingredients.
  2. Cut the apricot in 2 without separating them completely. 
  3. Fill the apricot with the mascarpone mix.
  4. Repeat the steps until there is no more mascarpone mix.
