Ingredients
- 500g asparagus
- 500g burrata (or 4 small burrata)
- ¼ cup sliced almonds
- 15ml (1 tbsp) maple syrup
- 15ml (1 tbsp) quality olive oil
- 30ml (2 tbsp) lemon, its juice
- salt & pepper
Methods
- Whisk all the maple dressing ingredients. Set aside.
- Grill the asparagus in the pan (with 1 tbsp of olive oil) or 2-3 minutes on the BBQ at maximum heat. Set the asparagus on a presentation plate.
- In a pan, on medium heat, grill the almonds, stirring regularly for 2-3 minutes.
- Lay the burrata on the asparagus. Spread the grilled almonds on top of the asparagus and burrata.
- Pour the maple dressing on the mix. Season with salt and pepper. Serve warm, cold or at room temperature.
