asparagus and burrata with its maple dressing

  • 500g asparagus
  • 500g burrata (or 4 small burrata)
  • ¼ cup sliced almonds
Maple dressing:
  • 15ml (1 tbsp) maple syrup
  • 15ml (1 tbsp) quality olive oil
  • 30ml (2 tbsp) lemon, its juice
  • salt & pepper


    1. Whisk all the maple dressing ingredients. Set aside.
    2. Grill the asparagus in the pan (with 1 tbsp of olive oil) or 2-3 minutes on the BBQ at maximum heat. Set the asparagus on a presentation plate.
    3. In a pan, on medium heat, grill the almonds, stirring regularly for 2-3 minutes.
    4. Lay the burrata on the asparagus. Spread the grilled almonds on top of the asparagus and burrata.
    5. Pour the maple dressing on the mix. Season with salt and pepper. Serve warm, cold or at room temperature.
