beets, apple, dried cranberries, pecan, parsley and feta with a maple syrup dressing

beets and apple salad



For the salad: 

  • 4 medium-size beets, cut in wedges
  • 1 large apple, diced
  • 50g (1/2 tasse) pecans
  • 50g (1/2 tasse) dried cranberries
  • 90g (1/2 tasse) feta cheese, crumbled
  • parsley, a handful, chopped
  • salt and pepper, to taste

For the dressing:

  • 2 tbsp maple syrup
  • 2 tbsp olive oil
  • 4 tbsp cider vinegar
  • salt and pepper, to taste


  1. In a medium size bowl, add the beets, apples, pecans, dried cranberries, feta, parsley, salt and pepper. Toss gently.
  2. Prepare the dressing by whisking all ingredients for the salad together. Drizzle over the salad. Toss again. Serve right away.
