Ingredients
For the salad:
- 4 medium-size beets, cut in wedges
- 1 large apple, diced
- 50g (1/2 tasse) pecans
- 50g (1/2 tasse) dried cranberries
- 90g (1/2 tasse) feta cheese, crumbled
- parsley, a handful, chopped
- salt and pepper, to taste
For the dressing:
- 2 tbsp maple syrup
- 2 tbsp olive oil
- 4 tbsp cider vinegar
- salt and pepper, to taste
Method
- In a medium size bowl, add the beets, apples, pecans, dried cranberries, feta, parsley, salt and pepper. Toss gently.
- Prepare the dressing by whisking all ingredients for the salad together. Drizzle over the salad. Toss again. Serve right away.
