chicken satay with maple peanut butter

 

Ingredients
  • a dozen skewers’ sticks

For the peanut sauce

  • ½ cup ME, MAPLE & I’s maple peanut butter
  • 6 tbsp water
  • 2 tbsp maple syrup
  • 2 tbsp soya sauce
  • 2 tbsp lime juice

For the chicken marinade

  • 6 chicken breast cut in 3cm cubes
  • ¼ cup soya sauce
  • 2 tbsp ME, MAPLE & I’s maple peanut butter
  • 2 tbsp lime juice
  • 2 tsp sesame oil
  • 2 tsp ginger, chopped
  • 1 garlic clove, chopped
  • pepper

Garnish (optional)

  • peanuts, roughly chopped
  • fresh coriander leaves, roughly chopped

Method 

  1. In a resealable container or bag, add all the chicken marinade ingredients. Mix well and add the chicken breasts. Let the chicken marinate for at least 30 minutes in the fridge.
  2. Add all the peanut sauce together in a small bowl and set aside. 
  3. Add the chicken pieces on the skewers sticks and cook on the BBQ or in an oiled pan on medium-high heat for 5 minutes on each side
  4. Set the skewers in a service dish and garnish with the crushed peanuts and coriander leaves.
  5. Serve with the peanut sauce.
