Ingredients
- a dozen skewers’ sticks
For the peanut sauce
- ½ cup
ME, MAPLE & I’s maple peanut butter - 6 tbsp water
- 2 tbsp maple syrup
- 2 tbsp soya sauce
- 2 tbsp lime juice
For the chicken marinade
- 6 chicken breast cut in 3cm cubes
- ¼ cup soya sauce
- 2 tbsp ME, MAPLE & I’s maple peanut butter
- 2 tbsp lime juice
- 2 tsp sesame oil
- 2 tsp ginger, chopped
- 1 garlic clove, chopped
- pepper
Garnish (optional)
- peanuts, roughly chopped
- fresh coriander leaves, roughly chopped
Method
- In a resealable container or bag, add all the chicken marinade ingredients. Mix well and add the chicken breasts. Let the chicken marinate for at least 30 minutes in the fridge.
- Add all the peanut sauce together in a small bowl and set aside.
- Add the chicken pieces on the skewers sticks and cook on the BBQ or in an oiled pan on medium-high heat for 5 minutes on each side.
- Set the skewers in a service dish and garnish with the crushed peanuts and coriander leaves.
- Serve with the peanut sauce.
