- 12 figs, cut in quarters
- 300g feta
- 80g rucola
- 10g basil, roughly chopped
- 4 handful walnuts (or the nut of your choice)
- 1 tbsp maple syrup
- 3 tbsp olive oil
- Prepare the dressing by whisking together the maple syrup and olive oil in a small bowl. Set aside.
- Place the rucola in a salad bowl and add the basil in.
- Spread the feta on top of the salad, add the maple dressing and toss gently.
- Add the figs and the walnuts on top
- Place into 4 bowls and enjoy while it lasts!
