maple energy balls with dates, nuts, and cacao

Ingredients

  • 150g (3/4 cup) almond
  • 75g (1/2 cup) raw cashews (or almonds)
  • 40g (1/4 cup) pistachios
  • 150g (1 cup) pitted dates
  • 50g (1/4 cup) dried apricots (or pitted dates)
  • 15g (1/4 cup) cocoa powder
  • 15ml (1 tbsp) maple syrup
  • 15-30ml (1-2 tbsp) water

Method

  1. In a food processor, combine the whole ingredients until coarsely chopped.
  2. Add the remaining ingredients and process for a few minutes, or until well combined and the mixture holds together.
  3. Form into 12x3cm or 15x2.5cm balls and refrigerate.
