maple curry chicken burgers with its spicy mayo and apple garnish

Ingredients 
  • 15ml (1 tbsp) vegetable oil
  • 4 hamburger buns
  • 1 tsp fresh dill, chopped
  • 1 apple, minced

For the spicy mayo:
  • 80ml (⅓ cup) mayonnaise
  • 15ml (1 tsp) Sriracha sauce
  • 2.5ml (½ tsp) curry powder
  • 15ml (1 tbsp) fresh ginger, chopped
For the patties:
  • 450 g ground chicken
  • 5ml (1 tsp) curry powder
  • 15ml (1 tbsp) fresh ginger, chopped
  • 30ml (2 tbsp) fresh coriander, chopped
  • 30ml (2 tbsp) fresh dill, chopped
  • 10ml (2 tsp) maple syrup
  • 5ml (1 tsp) Worcestershire sauce
  • 30ml (2 tbsp) of bread crumbs
  • salt & pepper, to taste

    Method

    1. Add the ground chicken in a bowl along with the patties ingredients. Shape four compact patties. Refrigerate.
    2. Combine the spicy mayo ingredients then set aside.
    3. Heat the oil over medium heat in a large pan and bake the patties for 4 to 5 minutes on each side or until the centre of the patty is well done.
    4. Mix 1 tbsp of spicy mayo with the dill and apple slices.
    5. Grill the buns. Spread spicy mayo onto each bun and top with a patty and apple slices.
