- 4 egg whites
- 200 g maple sugar
- Preheat the over to 100C. Line two baking trays with baking paper.
- Using an electric mixer, whisk egg whites. After one minute, gradually add maple sugar, a tablespoon at a time, whisking well between each addition and until sugar dissolves. All in all, this operation should take about 3 minutes until soft peaks form.
- Transfer mixture into a piping bag with a round nozzle (1 cm) and pipe small meringues of about 2 cm of diameter onto prepared baking trays.
- Bake for 2½-3 hours.
- Serve immediately or transfer into a sealable container to store until use.
