maple meringues

Ingredients
  • 4 egg whites
  • 200 g maple sugar

Method

    1. Preheat the over to 100C. Line two baking trays with baking paper.
    2. Using an electric mixer, whisk egg whites. After one minute, gradually add maple sugar, a tablespoon at a time, whisking well between each addition and until sugar dissolves. All in all, this operation should take about 3 minutes until soft peaks form.
    3. Transfer mixture into a piping bag with a round nozzle (1 cm) and pipe small meringues of about 2 cm of diameter onto prepared baking trays.
    4. Bake for 2½-3 hours.
    5. Serve immediately or transfer into a sealable container to store until use.
