Ingredients
- 1 head cauliflower
- 1 can of chickpeas, drained
- 60ml (1/4 cup) olive oil
- 30ml (2 tbsp) dijon mustard
- 15ml (1 tbsp) maple syrup
- 5ml (1 tsp) paprika
- 2.5ml (1/2 tsp) turmeric
- 2.5ml (1/2 tsp) salt
- 2.5ml (1/2 tsp) black pepper
- 1.25ml (1/4 tsp) smoked paprika
- 60ml (1/4 cup) fresh parsley, chopped
Method
- Preheat the oven to 200 C (400 F).
- Trim the cauliflower stem and cut it into florets. Add it to a large baking sheet with the drained chickpeas.
- Toss the cauliflower and chickpeas with the olive oil, spices, mustard and maple syrup. Mix with your hands to coat everything fully.
- Bake for 25 minutes, flipping halfway through.
- Once ready, top with chopped parsley.
