maple mustard cauliflower and chickpeas

 

Ingredients
  • 1 head cauliflower
  • 1 can of chickpeas, drained
  • 60ml (1/4 cup) olive oil
  • 30ml (2 tbsp) dijon mustard
  • 15ml (1 tbsp) maple syrup
  • 5ml (1 tsp) paprika
  • 2.5ml (1/2 tsp) turmeric
  • 2.5ml (1/2 tsp) salt
  • 2.5ml (1/2 tsp) black pepper
  • 1.25ml (1/4 tsp) smoked paprika
  • 60ml (1/4 cup) fresh parsley, chopped

Method

  1. Preheat the oven to 200 C (400 F).
  2. Trim the cauliflower stem and cut it into florets. Add it to a large baking sheet with the drained chickpeas.
  3. Toss the cauliflower and chickpeas with the olive oil, spices, mustard and maple syrup. Mix with your hands to coat everything fully.
  4. Bake for 25 minutes, flipping halfway through.
  5. Once ready, top with chopped parsley.
