roasted carrots with maple syrup

Ingredients 

  • 1 lb (450 g) carrots, various colours
  • 1 tbsp (15 ml) olive oil, plus more for serving
  • 1 tbsp (15 ml) whole-grain mustard
  • 1 tbsp (15 ml) maple syrup

Method

  1. With the rack in the middle position, preheat the oven to 400°F (200°C).

  2. Cut the carrots in half lengthwise.
On a non-stick or parchment paper-lined baking sheet, toss the halved carrots with the oil. Season with salt and pepper.
  3. Bake for 25 minutes.
 Remove the baking sheet from the oven. 
  4. Add the mustard and honey. Mix well. Continue to bake for 10 minutes or until the carrots are very tender and golden, stirring a few times during cooking.
