Ingredients
- 1 lb (450 g) carrots, various colours
- 1 tbsp (15 ml) olive oil, plus more for serving
- 1 tbsp (15 ml) whole-grain mustard
- 1 tbsp (15 ml) maple syrup
Method
- With the rack in the middle position, preheat the oven to 400°F (200°C).
- Cut the carrots in half lengthwise. On a non-stick or parchment paper-lined baking sheet, toss the halved carrots with the oil. Season with salt and pepper.
- Bake for 25 minutes. Remove the baking sheet from the oven.
- Add the mustard and honey. Mix well. Continue to bake for 10 minutes or until the carrots are very tender and golden, stirring a few times during cooking.
