strawberries’ top water infusion

Ingredients:
  • 210 g strawberries’ leafy tops  (the equivalent of 1.5 kg of strawberries)
  • 210 g maple sugar or maple syrup
  • 300g water
  • approximatively 1L cold or sparkling water

Preparation:

  1. In a medium saucepan, add the strawberries’ top, the maple sugar/syrup and the water.
  2. Bring to a boil for 10 minutes and then let simmer for another 5 minutes at medium heat. Let the mix cool down.
  3. Filter the syrup in a 1L bottle. 
  4. Fill the bottle with cold or sparkling water and leave in fridge until being consumed.
