strawberry and maple tiramisu

Ingredients

Strawberries purée:
  • 200g strawberries, stems removed
  • 30g maple sugar
  • 75g water
  • 1/2 lemon or 1 lime, its juice
Maple and mascarpone cream:
  • 5 eggs, yolks and white separated
  • 500g mascarpone
  • 60g maple sugar
  • 1 pinch salt
  • 24 Ladyfingers 
  • 300g strawberries, stems removed and sliced

Method:

  1. Place the strawberries, the water, the lemon juice and 30g of maple sugar into a bowl and grind to obtain a puree. Set aside.
  2. In another bowl, add the egg yolks and 60g of maple sugar. Whip for 1 minute at medium intensity.
  3. Add the mascarpone and whip again for 3 minutes at medium intensity. Set aside.
  4. In a third bowl, add the egg white and salt. Whip for 5 min in order to obtain stiff whipped egg whites. Fold gently into the reserved mascarpone cream.
  5. For the montage, briefly soak half of the Ladyfingers in reserved strawberry mixture (1/2 second on each side). Arrange half of the soaked Ladyfingers in the bottom of a 30x20cm (12’’x8’’) baking dish.
  6. Spread half the mascarpone mixture over the Ladyfingers base.
  7. Repeat the last 2 steps (5 & 6).
  8. Arrange sliced strawberries over the top, cover with cling wrap and refrigerate 5 hours.
