- 30g maple sugar
- 75g water
- 1/2 lemon or 1 lime, its juice
- 5 eggs, yolks and white separated
- 500g mascarpone
- 60g maple sugar
- 1 pinch salt
- 24 Ladyfingers
- 300g strawberries, stems removed and sliced
