Ingredients
Salad:
- 2 cups, strawberries, cut in quarters
- 2 avocados, cut in cubes
- 2 cup quinoa
- 1/2 cup mint, chopped
- 1/2 cup pecans, roughly choped
Maple dressing:
- 60ml (1/4 cup) olive oil or canola (colza) oil
- 30ml (2 tbsp) maple vinegar
- 15ml (1 tbsp) maple syrup
- 15ml (1 tbsp) Dijon mustard
Method
- Cook the quinoa as per the labels’ instructions.
- In a bowl, mix all the salad’s ingredients and set aside.
- In a small bowl, prepare the maple dressing.
- Pour the maple dressing on the salad and toss gently.
